The other day I was left with two browner than brown bananas. My all-time favorite banana bread calls for three bananas, so my options were, to buy more bananas or find a recipe for something that only needs two. What is a girl to do???
I am going to be honest A LOT of the time I choose a recipe based on the ingredients I already have. Meaning, that if I have two brown bananas, I am clearly going to make SOMETHING with them, it is just a matter of finding the right recipe.
So here I am, I have two bananas ready to be used, some cocoa, and some applesauce. After reading a bunch of recipes that included all of these ingredients I came across this one. It was perfect. I had the exact amount of each ingredient. It was as if it was meant to be!

I could tell the cake was done just from the smell – it was amazing. After letting it cool the appropriate amount of time I cut into it and of course, tried a bite. Honestly, my first bite was a bit chewy. It was disheartening. So I cut the rest of the cake and forgot about it for a little. When I came back to it, it looked so good that I decided to try it again, and let me tell you it was like night and day. It was incredible. The texture was airy, the chocolate chunks had partially melted, and there was just a hint of banana.

Next thing I know, almost half the cake is gone. I am telling you, it is THAT good. Also, did I mention that the cake contains bananas and applesauce? That means it is pretty much a fruit salad, right?? Ok, fruit salad is healthy, so this cake is healthy. Done. Go make this cake.

Chocolate Banana Snack Cake

- 8×8 Baking Dish
- Large Mixing Bowl
Ingredients
- 2 Bananas very ripe
- ½ cup Granulated Sugar
- ¼ cup Brown Sugar
- ½ cup Applesauce unsweetened
- ⅓ cup Water
- 1 tsp White Vinegar
- 1¼ cups All-Purpose Flour
- ¼ cup Unsweetened Baking Cocoa
- 1 tsp Baking Soda
- ¼ tsp Salt
- ⅔ cup Semi-Sweet Chocolate Chunks
Instructions
- Preheat the oven to 350F.
- Prep an 8×8 baking dish with cooking spray.
- In a medium bowl mash the bananas up really well.
- Add in both types of sugar, applesauce, water, and vinegar. Mix until combined.
- Next, stir in flour, cocoa, baking soda, and salt. Make sure not to over mix!
- Fold in half of the chocolate chunks.
- Pour batter into prepared dish and sprinkle the remaining chocolate chunks on top.
- Bake for about 35 minutes or until a toothpick inserted into the middle of the cake comes out clean.
- Let the cake cool completely – this might take 10-20 minutes – but it is worth it, I swear!
- Slice it up and serve! Or maybe just eat right out of the dish, this is a judgment-free zone.
